- In a large bowl, cream together the softened butter and icing sugar until it’s light and fluffy.
- Gradually mix in the plain flour, cornflour, and salt just until combined.
- Gently fold in the chopped strawberries.
- Scoop out generous tablespoon-sized servings of dough and roll them into neat balls. Place on a baking tray lined with parchment paper.
Baking
- Preheat the oven to 180°C (fan oven). Bake for about 15-18 minutes, or until the edges turn a light golden brown.

Notes
