Ingredients
  

Base ingredients
  • 1 cup almond flour Brown's brand is recommended but feel free to use any you prefer.
  • 1/2 cup vanilla protein powder Optimum Nutrition is recommended for best flavor.
  • 1/2 cup creamy almond butter Adds depth of flavor; any creamy nut butter can be used.
Sweeteners
  • 1/4 cup honey or maple syrup Use whichever you prefer based on mood.
  • 1 tsp vanilla extract Important for flavor; do not skip.
Filling ingredients
  • 1/2 cup chopped strawberries Fresh or frozen, thawed and drained.
Optional ingredients
  • shredded coconut Optional for a tropical twist.

Method
 

Preparation
  1. In a food processor, combine almond flour, protein powder, and almond butter. Blend until smooth and well mixed.
  2. Add in the honey (or maple syrup) and vanilla extract, then pulse a few more times.
  3. Gently fold in the strawberries and mix by hand for even distribution.
  4. Place the mixture in the fridge for about 30 minutes to firm up.
  5. Remove the mixture and roll it into bite-sized balls. Optionally, roll in shredded coconut.

Notes
