Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until fluffy. Add the cream cheese, egg, and vanilla extract, mixing until well combined.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually add this to the butter mixture.
  4. Gently fold in the chopped strawberries to the cookie dough.
  5. Using a cookie scoop, drop heaping spoonfuls of dough onto parchment-lined baking sheets, spacing them about 2 inches apart.
Baking
  1. Bake for 12-15 minutes until the edges are lightly golden but still soft in the middle.
  2. Remove from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes
