  • 2 pieces boneless, skinless chicken breasts I prefer organic, but any will work.
  • 400 ml coconut milk Full-fat version adds creaminess.
  • 4 tablespoons smooth peanut butter Any smooth variety works wonders.
  • 2 tablespoons soy sauce Use low-sodium if watching salt intake.
  • 1 tablespoon red curry paste Adjust based on spice preference.
  • 2 tablespoons honey or maple syrup I usually have honey on hand.
  • 1 piece lime Juice of 1 lime for freshness.
  • 1 piece bell pepper, sliced A red one adds sweetness and looks nice.
  • Green onions for garnish Adds a fresh touch.
  • Crushed peanuts for topping Optional, but adds a great crunch.

Method
 

Preparation
  1. Place your chicken in the slow cooker.
  2. Pour the coconut milk over the chicken.
  3. Mix in the peanut butter, soy sauce, curry paste, honey, and lime juice.
  4. Toss in the bell pepper.
Cooking
  1. Cover and cook on low for 6-7 hours or high for 3-4 hours.
