Ingredients
  

Main Ingredients
  • 2 cups chicken thighs, diced Thighs stay juicy; substitute with breast meat if preferred.
  • 1 piece onion, diced Yellow is cheaper, but red is fine too.
  • 1 piece red bell pepper, chopped Green bell pepper can be used if preferred.
  • 3 cloves garlic, minced Use more if desired for flavor.
  • 1 can diced tomatoes, undrained Tesco's own brand recommended for value.
  • 2 cups chicken stock Homemade is great but store-bought is usually fine.
  • 1 tbsp Cajun seasoning Don’t skimp on this for the best flavor.
  • to taste salt and pepper Start with a pinch and adjust.
  • 1.5 cups long-grain white rice Brown rice can be substituted but requires longer cooking time.
  • optional sliced green onions for garnish Adds a touch of class.

Method
 

Preparation
  1. Dice your chicken thighs into bite-sized pieces.
  2. In a skillet, add a splash of oil and sauté your onion, bell pepper, and garlic until soft and translucent.
  3. Transfer your sautéed veggies to the slow cooker, then add in chicken, tomatoes, stock, rice, and Cajun seasoning.
Cooking
  1. Cover and cook on low for 4-6 hours or high for 2-3 hours.
Serving
  1. When your jambalaya is ready, stir it a little and serve hot. Garnish with green onions if using.

Notes

If the bottom burns, add a little more chicken stock or water, scrape the bottom, and let it simmer for an additional 10-15 mins. Can substitute Cajun seasoning with paprika, garlic powder, and cayenne if needed. Use the ‘keep warm’ function on your slow cooker during kid emergencies.
