Preparation
- Dice your chicken thighs into bite-sized pieces.
- In a skillet, add a splash of oil and sauté your onion, bell pepper, and garlic until soft and translucent.
- Transfer your sautéed veggies to the slow cooker, then add in chicken, tomatoes, stock, rice, and Cajun seasoning.
Cooking
- Cover and cook on low for 4-6 hours or high for 2-3 hours.
Serving
- When your jambalaya is ready, stir it a little and serve hot. Garnish with green onions if using.

Notes
If the bottom burns, add a little more chicken stock or water, scrape the bottom, and let it simmer for an additional 10-15 mins. Can substitute Cajun seasoning with paprika, garlic powder, and cayenne if needed. Use the ‘keep warm’ function on your slow cooker during kid emergencies.
