  • 2 pieces chicken breasts (about 1 lb) If you find bone-in, snag those—more flavour!
  • 1 piece onion, diced Sweet onions are preferred.
  • 3 cloves garlic, minced Use 5 if you're feeling bold or fighting off a cold.
  • 2 cups chicken broth Homemade is ideal, but boxed is acceptable.
  • 1 can (4 oz) diced green chiles Adds a lovely kick.
  • 1 cup heavy cream Essential for a creamy texture.
  • 1 tsp cumin The spice of life!
  • to taste Salt and pepper Go heavy on the pepper if you like.
  • optional fresh cilantro for garnish Optional garnish; not everyone loves it.

Method
 

Cooking
  1. In a large pot over medium heat, add a splash of olive oil. Once it shimmers, toss in the chicken breasts. Sear for about 5 minutes, then flip and cook for another 5 minutes.
  2. Remove the chicken from the pot and let it rest briefly. Add the onions and garlic to the pot, cooking until fragrant (about 4-5 minutes).
  3. Shred the chicken using two forks once cool enough to handle.
  4. Combine the shredded chicken, broth, diced green chiles, cumin, salt, and pepper into the pot. Bring to a gentle simmer.
  5. After about 10 minutes of simmering, pour in the heavy cream, stir well, and let it simmer for another couple of minutes.

Notes
