  • 1 piece yellow bell pepper, sliced Sometimes orange is used for variety.
  • 1 piece red onion, sliced Tear-stained onions are a sign of love.
  • 2 tablespoons olive oil Use good quality oil for best flavor.
  • 1 teaspoon garlic powder Use two teaspoons if you’re feeling bold.
  • 1 teaspoon smoked paprika A secret weapon for cozy flavor.
  • to taste none Salt and pepper Don’t be shy with seasoning.
  • 4 pieces pitas or wraps Occasionally use wholemeal for health points.
  • 1 cup Greek yogurt Base for the herby ranch.
  • 1 tablespoon ranch seasoning mix Store-bought is convenient.
  • to taste none Fresh herbs (parsley or dill) Use whatever’s available.
  • to taste none Crushed red pepper flakes Optional for added kick.

Method
 

Preparation
  1. Preheat your oven to 200°C (400°F).
  2. Place the chicken breasts in a large bowl, add the sliced bell peppers and red onion.
  3. Drizzle olive oil over the chicken and veggies, then add garlic powder, smoked paprika, salt, and pepper.
  4. Massage the seasoning into the chicken.
  5. Transfer the seasoned chicken and veggies to a baking sheet in a single layer.
Cooking
  1. Roast in the oven for about 25 minutes or until the chicken is golden brown and reaches an internal temperature of 75°C (165°F).
  2. While the chicken is roasting, mix Greek yogurt with ranch seasoning and chopped herbs to make the herby ranch sauce.
  3. Warm the pitas in the oven for about 2-3 minutes.
Serving
  1. Stuff the warm pitas with chicken, roasted veggies, and a generous dollop of herby ranch sauce.
  2. Serve in a rustic bowl with a side salad or crispy fries.
Cleanup
  1. Soak and scrub the pan while enjoying the delicious aromas left in your kitchen.
