Ingredients
  

Main Ingredients
  • 1 pound Italian sausage Spicy or sweet depending on preference.
  • 1 medium onion, diced Yellow is preferred, but red is a great alternative.
  • 3 cloves garlic, minced Use more for added flavor.
  • 1 cup cream cheese Philadelphia brand is recommended.
  • 4 cups chicken broth Homemade or store-bought.
  • 1 cup grated Parmesan cheese Freshly bought from the deli is best.
  • Salt and pepper to taste Seasoning is key.
  • ½ teaspoon red pepper flakes Optional for a kick.

Method
 

Cooking the Sausage
  1. Heat a large pot over medium heat and add the sausage, breaking it up with a wooden spoon.
  2. Cook until nicely browned.
Adding Onion and Garlic
  1. Toss in diced onion and cook until translucent.
  2. Add minced garlic and cook for another minute until fragrant.
Pouring in Broth
  1. Pour in the chicken broth, scraping the bottom of the pot to deglaze.
Stirring in Cream Cheese
  1. Add cream cheese and stir until smooth and melted.
Adding Parmesan
  1. Mix in grated Parmesan cheese until the soup thickens.
  2. Taste and season with salt and pepper.
Serving
  1. Ladle the soup into bowls and garnish with extra cheese and red pepper flakes if desired.

Notes
