Method
Make the Caramel
- In a medium saucepan, combine the sugar and set over medium heat.
- Stir occasionally with a wooden spoon to prevent burning.
- Look for a golden brown color to know it's ready.
Add Butter and Cream
- Slowly add in the butter and cream once the sugar is caramelized.
- Stir until smooth and glossy.
Cool it Down
- Remove from heat and let the caramel cool slightly.
Make the Cookie Dough
- Cream together the softened butter and sugars until light and fluffy.
- Add in the eggs and vanilla extract.
Add the Dry Ingredients
- Mix in the flour, baking soda, and salt until combined.
Fold in the Chocolate and Caramel
- Gently fold in the chocolate chips and cooled caramel.
Bake Them Up
- Preheat your oven to 350°F (177°C) and drop spoonfuls of the dough onto a baking sheet lined with parchment.
- Bake for about 12-15 minutes until the edges are golden.
Let Cool and Finish with Sea Salt
- Sprinkle additional sea salt on top while still warm.
