Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour Use the cheap stuff; it works just as well.
  • 1 cup granulated sugar Sugar is the heart of sweetness.
  • 0.5 cup unsweetened cocoa powder Use the good stuff for best results.
  • 1 teaspoon baking soda Crucial for fluffiness.
  • 0.5 teaspoon salt Morton’s table salt is my go-to.
Wet Ingredients
  • 1 cup buttermilk Or regular milk with a splash of vinegar.
  • 1 teaspoon vanilla extract Use the real deal; imitation won’t cut it.
  • 1 large egg Free-range is preferred.
  • 0.5 cup unsalted butter, melted Use Lurpak for richness.
Frosting and Coating
  • 8 oz cream cheese, softened Philadelphia brand is recommended.
  • 2 cups powdered sugar I eat the leftovers straight from the bowl.
  • red velvet cake crumbs (from a one-layer cake) Bake your own or grab a slice from a bakery.
  • white chocolate or chocolate for coating Ghirardelli is preferred for flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking soda, and salt. Whisk to blend.
  3. In another bowl, mix buttermilk, egg, melted butter, and vanilla until well combined.
  4. Slowly add wet into dry ingredients, stirring until just combined.
  5. Pour batter into a greased 9-inch round cake pan and bake for about 25-30 minutes.
  6. Once baked, cool the cake for about 10 minutes, then crumble it into a large bowl.
  7. Mix in softened cream cheese and powdered sugar until fully combined.
  8. Roll the mixture into bite-sized balls and place them onto a parchment-lined baking sheet.
  9. Chill the balls in the fridge for at least 30 minutes.
  10. Melt your chocolate in a microwave-safe bowl. Dip each truffle in chocolate and place it back on parchment paper.
  11. Chill the coated truffles until the chocolate hardens.

Notes
