Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour Tesco brand is reliable; self-raising flour works too.
  • 0.5 cup unsweetened cocoa powder Dark chocolate cocoa adds depth of flavor.
  • 1 tsp baking soda The cookie's magic raising agent.
  • 0.5 tsp salt Sea salt enhances the sweetness.
Wet Ingredients
  • 1 cup unsalted butter, softened Microwave for 10 seconds if you forget to take it out.
  • 1 cup granulated sugar Regular sugar works perfectly.
  • 1 cup brown sugar Adds moisture; it’s a secret ingredient.
  • 2 large eggs Should be at room temperature.
  • 1 tsp vanilla extract Madagascar vanilla is lovely but regular works too.
  • 1 cup buttermilk Mix vinegar or lemon juice with milk if out of buttermilk.
  • to taste drops red food coloring (gel preferred) Adjust the color until satisfied.
Topping
  • to taste cream cheese frosting Homemade for the best taste.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  2. In a medium bowl, sift together flour, cocoa powder, baking soda, and salt.
  3. In your stand mixer, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  4. Add eggs one at a time, mixing well after each addition, followed by vanilla extract.
  5. Add buttermilk, followed by red food coloring. Adjust color to your liking.
  6. Gradually add the dry mixture to the wet ingredients, mixing on low speed until just combined.
  7. Using a tablespoon or cookie scoop, drop heaping tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart.
Baking
  1. Bake the cookies for approximately 12-15 minutes, until the edges are firm but the center is still soft.
  2. Let the cookies cool on a wire rack for about 10 minutes before frosting with cream cheese frosting.

Notes
