Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour Use whatever's on sale.
  • 1 cup granulated sugar Life's too short for too little sugar.
  • 1 tbsp baking powder Make sure it's fresh for lovely domes.
  • 1/2 tsp salt Sea salt adds a nice balance.
  • 1/2 tsp ground cinnamon For a warm, cozy flavor.
Wet Ingredients
  • 1 cup milk Semi-skimmed for a lighter option.
  • 1/2 cup unsalted butter, melted Margarine can be used in a pinch.
  • 1 large egg Room temperature if possible.
Main Ingredients
  • 2 cups fresh or canned peaches, diced Drain and rinse canned peaches well.
  • 1/2 cup brown sugar Use light brown for a fancier topping.
Optional Ingredients
  • to taste chopped pecans For additional crunch.

Method
 

Preheat Your Oven
  1. Preheat your oven to 350°F (175°C).
Mix Dry Ingredients
  1. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
Combine Wet Ingredients
  1. In another bowl, combine the milk, melted butter, and egg.
Mix It All Together
  1. Pour the wet mix into the dry ingredients and add your peaches. Stir gently until just combined.
Fill the Muffin Tins
  1. Line your muffin tin with paper liners or grease them well, then fill each liner about 2/3 full with the batter.
Bake
  1. Pop the tray into your preheated oven and bake for 20-24 minutes, or until a toothpick comes out clean.
Cool and Serve
  1. Allow the muffins to cool in the tin for 5-10 minutes before transferring them to a wire rack.
