Ingredients
  

Nut and Seed Mixture
  • 1 cup mixed nuts You could use almonds, cashews, or walnuts.
  • ½ cup seeds Use pumpkin, sunflower, or whatever you have.
Sweetening and Binding
  • 1 cup medjool dates, pitted These add the perfect sweetness.
  • ½ cup nut butter Almond butter or any preferred nut butter will work.
  • ½ tsp vanilla extract Optional but enhances flavor.
  • a pinch none salt Sea salt recommended for flavor enhancement.

Method
 

Preparation
  1. Toss your mixed nuts and seeds into the food processor and give it a quick blitz until they’re finely chopped.
  2. Add the pitted dates and nut butter to the processor, along with a splash of vanilla and salt. Blitz until it’s just combined.
  3. Pour your nut-seed mixture into a bowl. Form small balls (about a tablespoon each) and place them onto a lined baking tray.
Baking
  1. Preheat your oven to 180°C (355°F) and bake the cookies for about 12-15 minutes until they’re lightly golden.
