Ingredients
  

Puff Pastry
  • 1 sheet 1 sheet of puff pastry (thawed if frozen) Ready-made is preferred for convenience.
Filling
  • 250 g 250g mascarpone cheese For a creamy and dreamy filling.
  • 2 tablespoons 2 tablespoons icing sugar Use real icing sugar for better taste.
  • 1 teaspoon 1 teaspoon vanilla extract Madagascar vanilla adds an exceptional flavor.
  • 1 egg 1 egg (beaten, for egg wash) Free-range eggs are preferred.
Toppings
  • Optional: fresh berries or chocolate for topping A great way to enhance presentation.

Method
 

Preparation
  1. Preheat your oven to 200°C (or 180°C for fan oven). This ensures your pastry rises beautifully.
  2. On a lightly floured surface, roll out your puff pastry until it’s roughly the size of an A4 sheet.
  3. In a bowl, mix together the mascarpone, icing sugar, and vanilla extract until smooth.
  4. Cut the rolled-out puff pastry into squares, about 10cm by 10cm. Place a dollop of the mascarpone mixture in the centre of each square.
  5. Fold the corners of each pastry square toward the centre and pinch to seal. Brush the tops with the beaten egg wash.
  6. Place the pastries on a lined baking tray and bake for 15-20 minutes or until golden brown and puffed.

Notes
