  • 3 large eggs Fresh eggs preferred.
Dry Ingredients
  • 150 g almond flour Essential for texture.
  • 1 tbsp baking powder Necessary for fluffiness.
  • 0.5 tsp salt Sea salt recommended.
  • 1 tsp garlic powder Optional for flavor.
Optional Ingredients
  • herbs like rosemary or thyme Add if desired.

Preparation
  1. Preheat your oven to 190°C (375°F).
  2. In a mixing bowl, combine the cottage cheese and eggs, mixing well to smooth out the cottage cheese.
  3. In another bowl, whisk together the almond flour, baking powder, garlic powder, and salt.
  4. Pour the dry mixture into the wet mixture and stir until just combined.
  5. With slightly wet hands, form the dough into small balls and place them on a baking tray lined with parchment paper.
  6. Pop the rolls into the oven and bake for about 20-25 minutes until golden brown and firm to the touch.
