Method
 

Preparation
  1. Cream the softened butter and ½ cup of powdered sugar in a large mixing bowl until light and fluffy (about 3-5 minutes).
  2. Gently mix in the vanilla extract, lemon zest, and salt until combined.
  3. Gradually add the flour, beating on low speed until just combined, being careful not to overmix.
  4. Wrap the dough in plastic film and chill in the refrigerator for at least 30 minutes.
  5. Preheat your oven to 180°C (350°F) and line baking sheets with parchment paper.
  6. Use a small ice cream scoop or your hands to form tiny balls (about 1 inch in diameter) and place them on the prepared baking sheets.
Baking
  1. Bake for about 12-14 minutes, until the edges are lightly golden.
  2. Let cool on the baking sheet for a few minutes before rolling in powdered sugar.
