Ingredients
  

Main Ingredients
  • 6 medium medium eggs I use organic, but only because they seem happier.
  • cup soy sauce I prefer Koon Chun brand, but avoid cheap brands.
  • 1 tbsp mirin Adds a hint of sweetness.
  • 1 tsp sugar Optional, but recommended.
  • 2 green onions, sliced For garnish.
  • sesame seeds (optional) Adds a fancy touch.

Method
 

Boiling the Eggs
  1. Bring a pot of water to a gentle boil.
  2. Reduce heat to medium and add the eggs.
Shocking the Eggs
  1. Boil for exactly 6 minutes.
  2. Transfer the eggs to an ice bath immediately.
Preparing the Marinade
  1. In a mixing bowl, combine soy sauce, mirin, sugar, and a splash of water.
Peeling the Eggs
  1. Carefully peel the cooled eggs.
Soaking the Eggs
  1. Place peeled eggs in the marinade for at least 20 minutes, preferably overnight.
Serving
  1. Slice the eggs in half and garnish with sliced green onions and sesame seeds.
