  • 2 pieces chicken breasts, diced Free-range is preferred for better flavor.
  • 1/4 cup honey Use local honey for better flavor.
  • 2 pieces limes, juiced Fresh is best, but bottled juice will do in a pinch.
  • 1 tbsp soy sauce Essential for umami flavor.
  • 1 tsp garlic powder Convenient alternative to fresh garlic.
  • to taste Salt and pepper Considered a seasoning essential.
For the Rice
  • 1 cup jasmine rice Rinse before cooking for better texture.
Optional Garnish
  • to taste chopped fresh cilantro Adds freshness, serve on the side if not liked by everyone.

Method
 

Marinating the Chicken
  1. In a bowl, whisk together the honey, lime juice, soy sauce, and garlic powder. Add in the diced chicken and toss to coat. Let sit for at least 30 minutes (or 10 minutes if you're short on time).
Cooking the Rice
  1. While the chicken marinates, rinse the rice under cold water until it runs clear, then cook according to package instructions.
Sizzling the Chicken
  1. Heat a non-stick skillet over medium heat and add the marinated chicken (discard any leftover marinade). Cook for about 6-8 minutes, or until golden brown and cooked through.
Bringing it All Together
  1. Once the chicken is cooked through, combine it with the fluffy rice in a serving dish and toss gently.

Notes

If you burn the bottom, add a splash of water to loosen stuck bits. Maple syrup can be used if honey is unavailable. It's okay to pause the cooking for kid emergencies.
