Marinate the Chicken
- In a bowl, mix the soy sauce, pineapple juice, brown sugar, garlic, ginger, salt, and pepper.
- Let the chicken marinate for at least 30 minutes, preferably a few hours in the fridge.
Prepare Your Grill Pan
- Heat your grill pan over medium-high heat until sizzling.
- Slice extra pineapples for grilling while the pan heats.
Cook the Chicken
- Add the marinated chicken to the hot pan, ensuring not to overcrowd.
- Cook for 6-7 minutes on one side, then flip and cook for another 5-6 minutes until caramelized and cooked through.
Grill the Pineapple
- Toss pineapple slices on the grill pan for a couple of minutes on each side until lightly charred.
Let it Rest
- Let the chicken rest for at least 5 minutes before slicing.
