Greek Feta Baked Potatoes

Ingredients
  

For the potatoes
  • 4 large large baking potatoes Maris Piper preferred for fluffiness.
  • 2 tbsp olive oil Use good-quality oil for better flavor.
  • 1 tsp dried oregano
  • Salt and pepper to taste Add more salt for flavor.
For the filling
  • 150 g feta cheese, crumbled Use Greek feta that comes in brine.
  • Fresh parsley, chopped Optional garnish.

Method
 

Preparation
  1. Preheat your oven to 220°C (428°F).
  2. Wash and pat dry the potatoes, then prick them all over with a fork.
  3. Rub each potato with olive oil, salt, and pepper.
Baking
  1. Place the potatoes directly on the oven rack and bake for about 45–60 minutes, depending on their size.
  2. Meanwhile, crumble the feta and mix it with dried oregano in a bowl.
  3. Once the potatoes are done, remove them from the oven and slice them open.
  4. Stuff the potatoes with the feta mix, pressing down slightly.
  5. Return the stuffed potatoes to the oven and bake for another 10–15 minutes until the feta is golden brown.
  6. Sprinkle with fresh parsley before serving.

Notes
