These delightful gluten-free apple turnovers are a touch of comfort, filled with a sweet and cinnamon-spiced apple filling wrapped in flaky pastry.

Ingredients
  

For the Dough
  • 2 cups gluten-free flour I use Bob’s Red Mill for consistency.
  • 1/2 tsp salt A pinch is essential for flavor.
  • 1/4 cup chilled butter, cubed Cold butter is key for flaky texture.
  • 1/4 cup cold water Optional: add a splash of vanilla extract.
For the Filling
  • 2 large apples, peeled and diced I prefer Granny Smith and Fuji.
  • 1 tsp cinnamon Perfect with the apples.
  • 1/4 cup brown sugar Adds sweetness and depth.
  • 1 egg, beaten For egg wash, gives a golden finish.

Method
 

Preparation
  1. Mix the gluten-free flour and salt in a bowl. Add cubed butter and mix until it resembles breadcrumbs.
  2. Gradually add cold water until the dough comes together. It should be slightly sticky but workable.
  3. Wrap the dough in cling film and chill in the fridge for 30 minutes.
Filling the Turnovers
  1. While the dough chills, prepare the filling by cooking the diced apples with brown sugar and cinnamon until soft and fragrant.
  2. Roll out the chilled dough on a floured surface to about 1/8 inch thick.
  3. Cut out circles of dough, fill the center with apple filling, and seal them with a fork or by pinching the edges.
Baking
  1. Brush the tops with the beaten egg and place on a parchment-lined baking sheet.
  2. Bake in a preheated oven at 180°C (350°F) for 20-25 minutes until golden brown.

Notes
