  • 2 teaspoons instant yeast This is not the same as active dry yeast.
  • 1 tablespoon sugar This adds a hint of sweetness.
  • 1 tablespoon salt Use sea salt for best results.
Wet Ingredients
  • 2 cups warm water Ideally between 100°F and 110°F.
  • 4 tablespoons extra virgin olive oil Good quality olive oil enhances flavor.
Flavor Enhancers
  • 3 cloves garlic, minced You can use more if desired.
  • 1 handful fresh rosemary sprigs Use half the amount if using dried.
  • to taste coarse sea salt for topping Helps with the golden crust.

Method
 

Mixing the Dry Ingredients
  1. In a large mixing bowl, combine flour, yeast, sugar, and salt. Whisk to blend together.
Add the Warm Water
  1. Slowly pour warm water into the mixing bowl while stirring to form a shaggy dough.
The Olive Oil Splash
  1. Stir in olive oil gently into the dough.
Kneading the Dough
  1. Flour your work surface and knead the dough for 8-10 minutes until smooth.
Letting It Rise
  1. Place the dough in a greased bowl, cover with a damp cloth, and let it rise for 1-2 hours until doubled.
Preheat the Oven
  1. Preheat your oven to 425°F (220°C).
Forming the Muffins
  1. Punch down the risen dough, divide into 12 pieces, and shape into rustic muffins.
Prepare for Baking
  1. Grease a muffin tin, place a piece of dough in each, and sprinkle with garlic and rosemary.
Second Rise
  1. Cover the muffin tray and let rise for another 30 minutes.
Bake the Muffins
  1. Sprinkle coarse sea salt on top and bake for 20-25 minutes until golden brown.
