- Begin by heating the olive oil and butter in a large pot over medium heat.
- Add the minced garlic to the pot and sauté for 2 minutes until fragrant.
- Pour in the broth, scraping the bottom of the pot to deglaze any stuck bits.
- Stir in the uncooked macaroni and let it simmer uncovered for about 10-12 minutes, or until cooked al dente.
- Once the pasta is cooked, turn off the heat and stir in the cream and cheeses until melted and combined.
- Taste and season with salt and pepper.

Notes
If you burn the bottom, add a splash more broth and stir gently. If you're out of Gruyère, use a mix of mozzarella and cheddar.
