Main Ingredients
  • 400 g ground chicken Preferably free-range for better quality.
  • 2 tablespoons olive oil Any decent kind will do.
  • 1 red bell pepper, diced Adds color.
  • 1 yellow bell pepper, diced For a rainbow effect.
  • 1 small onion, diced Brown or yellow onion.
  • 3 cloves garlic, minced Increase to 5 for more flavor.
  • 1 inch fresh ginger, grated Can substitute with ground ginger.
  • soy sauce, to taste Kikkoman recommended for umami.
  • Sriracha sauce, to taste Adjust based on heat preference.
  • 1 pinch salt For seasoning.
  • 1 pinch pepper For seasoning.
  • cooked rice or quinoa for serving Cauliflower rice works too.

Method
 

Preparation
  1. Heat the olive oil in a large pan over medium heat.
  2. Add the diced onion, bell peppers, and minced garlic to the pan. Sauté until the onions turn translucent and fragrant.
  3. Add the ground chicken to the pan and break it up as it cooks.
  4. Once the vegetables smell divine, sprinkle in the grated ginger, soy sauce, and Sriracha. Mix well.
  5. Cook until the chicken is thoroughly cooked, about 5-7 minutes, then remove from heat.

Notes

Serve in shallow dishes, sprinkle with crushed peanuts for crunch. Leftovers taste even better the next day. If you burn the bottom, add a splash of water before serving. For lack of Sriracha, blend ketchup with hot sauce.
