Ingredients
  

Vegetables
  • 1 head broccoli, cut into florets Use organic for cleaner eating.
  • 3 large carrots, sliced A mix of orange and purple adds color.
Seasoning
  • 2 tablespoons olive oil Extra virgin is preferred for better flavor.
  • 1 teaspoon garlic powder Use fresh garlic if available, adding 1-2 cloves chopped.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the broccoli florets and sliced carrots with olive oil, garlic powder, salt, and pepper until all coated.
  3. Spread the coated vegetables evenly on a baking sheet.
Roasting
  1. Roast the veggies for 20–25 minutes, flipping them halfway through.
  2. If desired, sprinkle Parmesan cheese during the last 5 minutes of roasting.
