  • 4 pieces cod fillets (about 150g each) Frozen can be used; just thaw before cooking.
  • 0.25 cup honey Local honey preferred for better flavor.
  • 2 tbsp soy sauce Gluten-free variety recommended.
  • 1 piece lemon, juiced Fresh is best, but bottled works too.
  • 2 cloves garlic, minced Fresh garlic recommended.
  • 1 tsp dried thyme Fresh thyme can be used if available.
  • 1 tsp salt To taste.
  • 1 tsp pepper To taste.
  • optional sliced green onions for garnish For visual appeal.

Method
 

Preparation
  1. Preheat your oven to 200°C (400°F). Line your baking dish with parchment paper.
Make the Marinade
  1. In a small bowl, whisk together honey, soy sauce, lemon juice, minced garlic, and thyme until glossy.
Coat the Cod
  1. Place cod fillets in the baking dish and pour the marinade over them, coating well.
  2. Optionally, save some marinade to brush on the cod halfway through cooking.
Baking
  1. Bake in the preheated oven for 15-20 minutes, or until the cod flakes easily with a fork.
Serving
  1. Remove from oven and let sit for a minute before serving with fluffy jasmine rice or roasted vegetables.

Notes
