  • 500 g chicken breast, cut into bite-sized pieces Free-range is preferred for better taste.
  • 3 tbsp cornflour Essential for crispiness.
  • 1 tbsp soy sauce Kikkoman is recommended.
  • 3 tbsp sweet chili sauce Balances the flavors.
  • 2 tbsp vegetable oil Avoid olive oil.
  • 1 piece bell pepper, sliced Any color works.
  • 1 piece onion, sliced A staple in many dishes.
  • 3-4 cloves garlic, minced Use more if desired.
  • 1 inch ginger, minced Grating is optional.
  • 2-3 pieces green chilies Adjust based on spice preference.
  • Salt to taste Start light, add more if needed.
  • 1 tsp sesame oil, for drizzling Adds a finishing touch.

Method
 

Preparation
  1. Toss chicken pieces with cornflour, a splash of soy sauce, and a pinch of salt in a bowl. Let it sit.
Cooking
  1. Heat vegetable oil in a non-stick pan over medium heat until shimmering.
  2. Fry the chicken in batches until golden and crispy, then set aside on paper towels.
  3. In the same pan, add sliced onion first, then garlic, ginger, and green chilies, stirring until fragrant.
  4. Add the chicken back with sliced bell pepper, sweet chili sauce, and a splash of water to deglaze the pan.
  5. Simmer for a minute and drizzle with sesame oil before serving.
Serving
  1. Serve in a large bowl or platter, ideally with fluffy rice or noodles.

Notes

If you're out of cornflour, you can substitute with regular flour but it won’t be as crispy. To maintain heat in the kitchen, pre-chop your ingredients. Enjoy with a glass of wine or tea!
