  • 2 cups granulated sugar Use any brand; sugar is sugar.
  • 1 cup water Tap water works fine.
  • 1 cup corn syrup Provides stability without crystallizing.
  • 1 tsp flavouring extract Vanilla, mint, or other flavors as desired.
  • food coloring Optional, for colorful candy.
  • handful sprinkles For decoration.

Method
 

Preparation
  1. Pour 2 cups of sugar, 1 cup of water, and 1 cup of corn syrup into a sturdy saucepan and stir gently to combine.
Cooking
  1. Place the saucepan over medium heat and allow it to boil for about 10 minutes.
  2. Once it starts bubbling, do not stir.
Checking the Candy Stage
  1. Monitor the mixture until it reaches softball stage (240°F/115°C) and then remove from heat.
Flavoring and Coloring
  1. Let the boiling mixture sit for a minute, then carefully stir in your flavoring extract and food coloring.
Cooling
  1. Pour the candy mixture into a baking dish lined with parchment paper and let it cool at room temperature.
Breaking the Candy
  1. Once cooled, break the candy into small pieces, freeing yourself from any accidental 'candy warfare' with a hammer if necessary.
