Ingredients
  

For the cookies
  • 2.5 cups all-purpose flour Keep a stash of plain flour for convenience.
  • 1 cup granulated sugar Regular granulated sugar works fine.
  • 0.5 cup brown sugar Adds extra flavor to the cookies.
  • 0.5 cup unsalted butter, softened If in a pinch, microwave for 10 seconds.
  • 1 large egg Room temperature is preferable.
  • 1 tablespoon vanilla extract Use natural if possible.
  • 1 tablespoon red food colouring Essential for vibrant color.
  • 2 tablespoons cocoa powder Cadbury's for nostalgia!
  • 1 teaspoon baking soda Make sure it's fresh.
  • 0.5 teaspoon salt Sea salt is preferred.
  • 0.5 cup cream cheese, softened Optional for frosting.
  • 1 cup chocolate chips or nuts Optional add-ins for extra flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.
  3. Beat in the egg, vanilla extract, and red food colouring until well blended.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually mix this into the wet ingredients until just combined.
Baking
  1. Using a cookie scoop, drop spoonfuls of dough onto baking sheets lined with parchment paper, spacing them about 2 inches apart.
  2. Slide your tray into the oven and bake for about 10-12 minutes or until the edges are set but the centres are still soft.
  3. Let the cookies cool on the baking sheet for 5 minutes before transferring them to wire racks to cool completely.
Frosting
  1. If using, whip together the cream cheese, vanilla, icing sugar, and a splash of milk until light and fluffy.
  2. Spread or pipe frosting onto each cooled cookie.
