Base Ingredients
  • 2 tbsp olive oil Good quality oil makes a difference!
  • 1 medium onion, diced Yellow or red works.
  • 3 cloves garlic, minced Use 5 if you're feeling adventurous!
  • 1 lb ground beef Lean beef preferred.
  • 4 large Yukon Gold potatoes, diced Choose large ones for fluffy texture.
  • 4 cups chicken broth M&S Organic preferred.
  • 1 cup heavy cream Half-and-half can be used as a substitute.
  • 1 tsp dried thyme A magical herb for soups.
  • Salt and pepper to taste Season thoughtfully.
Optional Toppings
  • shredded cheese Adds a nice touch.
  • green onions For a fresh finish.
  • croutons Perfect for crunch.

Method
 

Preparation
  1. Heat the olive oil in your slow cooker or a skillet over medium heat.
  2. Add the diced onion and minced garlic. Sauté until fragrant.
  3. Add the ground beef and cook until browned, about 5-7 minutes.
  4. Stir in the diced potatoes, dried thyme, salt, and pepper.
  5. Pour in the chicken broth and stir well.
  6. Set your slow cooker on low for 6-8 hours.
  7. About 30 minutes before serving, stir in the heavy cream.
