  • 1 lb hot dogs, sliced Chicken or beef, based on preference.
  • 1 can chili beans (15 oz) Heinz is recommended for balanced flavor.
  • 1 can diced tomatoes with green chilies (10 oz) Organic brands can be a splurge.
  • 1 cup uncooked elbow macaroni Any available pasta can be used.
  • 2 cups shredded cheese Cheddar, Monterey Jack, or whichever is on sale.
  • 1 cup corn Frozen works best, but fresh is fantastic in season.
  • 1 packet taco seasoning Convenient and full of flavor.
  • Salt and pepper to taste Seasoning enhances the dish.

Method
 

Preparation
  1. In your slow cooker, toss in the sliced hot dogs, chili beans, diced tomatoes, uncooked macaroni, corn, taco seasoning, and a pinch of salt and pepper.
  2. Stir everything together well to combine.
Cooking
  1. Cook on high for about 3 hours or low for 5 hours.
  2. Once the mix is well combined and has been cooking for the designated time, sprinkle in the cheese and let it melt.
Serving
  1. Serve the casserole hot in bowls or on plates, garnished with extra cheese or sour cream if desired.
