Ingredients
  

For the Salmon Bites
  • 400 g salmon fillets, cut into bite-sized pieces Fresh is great, but frozen works too.
  • ½ cup breadcrumbs Panko is recommended for extra crunch.
  • 2 tbsp cornstarch Helps with the crisp factor.
  • 1 egg Be prepared for some accidental shell!
  • 1 tsp garlic powder Or use 3 cloves minced if feeling adventurous.
  • 1 tsp smoked paprika Adds a lovely warmth.
  • Salt and pepper to taste Sea salt is preferred.
For the Bang Bang Sauce
  • 4 tbsp mayonnaise Hellmann’s is a classic choice.
  • 1 tbsp sweet chilli sauce This is the secret weapon!
  • 1 tsp sriracha For a little kick, optional.

Method
 

Preparation
  1. Preheat your oven to 200°C (about 400°F) while you gather everything.
  2. In a bowl, combine the salmon pieces with garlic powder, smoked paprika, salt, and pepper.
  3. In three separate bowls, place the cornstarch, beaten egg, and breadcrumbs.
  4. Mix together the mayonnaise, sweet chilli sauce, and sriracha in a small bowl until well combined.
Coating and Baking
  1. Dip each piece of salmon first in cornstarch, then in the egg, and finally in the breadcrumbs.
  2. Place the coated salmon bites on a baking tray lined with parchment paper and bake for 12-15 minutes, flipping halfway through.
Serving
  1. Once the salmon bites are crispy and golden, remove them from the oven and serve with your bang bang sauce drizzled on top or on the side for dipping.

Notes

If you burn the bottom, just scrape off the burnt bits. If they're soggy, pop them back in the oven until crisp.
