Main Ingredients
  • 500 g fresh salmon fillets, skin removed I usually get mine from the local fishmonger.
  • 1 cup panko breadcrumbs These give the ultimate crunch, but you can use regular breadcrumbs if that’s what you’ve got.
  • 1/2 cup plain flour Any flour will do; I usually grab whatever’s on sale.
  • 2 large eggs Organic free-range if you can find them, but don’t stress if not.
Sauce Ingredients
  • 1/4 cup mayonnaise I use Hellmann’s because it’s creamy and oh-so-good.
  • 2 tablespoons sweet chili sauce This is the real star of the show.
  • 1 teaspoon garlic powder Never underestimate garlic.
  • Salt and pepper to taste I also sprinkle some dried herbs if I'm feeling fancy.
To Serve
  • Fresh greens (spinach or mixed salad leaves) Pretending I'm eating something healthy.
  • Lime wedges A squeeze of lime brings everything to life!

Method
 

Preparation
  1. Preheat your oven to 200°C (fan) or 220°C (standard) and line a baking tray with baking paper.
  2. Create three bowls: one for flour, one for beaten eggs, and one for panko breadcrumbs.
  3. Cut the salmon into bite-sized pieces. Dip each piece first in the flour, then the egg, and finally, coat it in the panko breadcrumbs.
Baking
  1. Place the salmon bites on your baking tray, ensuring they don’t touch.
  2. In a small bowl, mix together the mayonnaise, sweet chili sauce, garlic powder, salt, and pepper.
  3. Pop the baking tray in the oven and bake for about 12-15 minutes, or until golden and crispy.

Notes

If you burn the bottom, don't panic! Just scrape off the burnt bits. If you’re out of panko breadcrumbs, regular breadcrumbs or even crushed cornflakes can make a decent substitute.
