  • 1 tablespoon olive oil Extra virgin for best flavor
  • 1 large onion, diced Yellow or red for variety
  • 3 cloves garlic, minced Or add more if you like
  • 2 cans diced tomatoes, 400g each Tesco's brand preferred for flavor
  • 1 can white beans, rinsed and drained, 400g For convenience in weeknight cooking
  • 1 cup vegetable broth or water Adjust based on desired liquidity
  • 1 teaspoon dried basil Fresh basil can be used if available
  • 1 teaspoon dried oregano Adds extra flavor
  • to taste Salt and pepper Sea salt recommended
  • ½ cup heavy cream Coconut milk for dairy-free option
  • for garnish Fresh basil Optional garnish for presentation

Method
 

Preparation
  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the diced onion and sauté until soft and translucent, about 5 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the diced tomatoes and their juices. Let it bubble.
  5. Incorporate the rinsed white beans and vegetable broth, mixing well.
  6. Season with basil, oregano, salt, and pepper to taste.
  7. Lower the heat and stir in the heavy cream until fully incorporated.
  8. Allow it to simmer on low for 10 minutes.
  9. Taste the stew one last time and adjust seasoning if needed before serving.
