- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes. Then add the garlic and sauté for an additional minute, being careful not to burn it.
- Slowly pour in the beef broth while stirring to combine.
- Stir in the sauerkraut and chopped corned beef.
- Reduce the heat to low and add the heavy cream and Swiss cheese, stirring until completely melted and combined.
- Stir in the Dijon mustard and season with salt and pepper to taste.
