Ingredients
  

For the Stuffed Mushrooms
  • 12 large large mushrooms, cleaned Portobellos preferred for their meaty texture.
  • 8 oz cream cheese, softened Go for full-fat for creaminess.
  • 1/2 cup shredded cheddar cheese Use mature for a punchy flavor.
  • 2 jalapenos, diced Remove seeds for less heat.
  • 1 clove garlic, minced Add more for a stronger flavor.
  • 1/4 tsp salt Enhances the flavor without overpowering.
  • 1/4 tsp pepper Freshly cracked is best.
  • Optional: chopped fresh cilantro for garnish Leave out if you prefer no cilantro.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Clean the mushrooms, remove the stems, and scoop out a bit of the insides to make space for the filling.
Mix the Filling
  1. In a bowl, combine cream cheese, cheddar cheese, diced jalapenos, minced garlic, salt, and pepper. Mix gently to combine.
Stuff the Mushrooms
  1. Using a cookie scoop, fill each mushroom cap with the cheese mixture, ensuring they are generously filled.
Bake
  1. Place the stuffed mushrooms on a greased baking tray and bake for 20 minutes, checking for doneness.
  2. If needed, turn on the broiler for a few minutes to achieve a golden crust.
Serve
  1. Once done, serve them hot, optionally garnished with cilantro.
