  • 1 can white beans, drained and rinsed For extra protein.
  • 4 cups chicken broth Low-sodium preferred.

  • 1 tsp Italian seasoning Homemade or store-bought both work.

Method
 

Preparation
  1. Heat a large pot over medium heat and add a drizzle of olive oil. When it shimmers, toss in the onions, carrots, and celery.
  2. Stir in the garlic and cook for another minute until fragrant.
  3. Push the veggies to the side and add the ground chicken to the pan, breaking it up and cooking until browned.
  4. Add the diced tomatoes, white beans, chicken broth, and Italian seasoning. Stir well and bring to a gentle simmer.
  5. Lower the heat and gently stir in the heavy cream. Let it simmer for an additional 5-10 minutes.
  6. Season with salt and pepper to taste, adjusting as necessary.
