Ingredients
  

Wet Ingredients
  • 1 cup warm milk Any milk of your choice, almond milk recommended.
  • 1/2 cup honey Use good quality honey for best flavor.
  • 1/4 cup brown sugar Dark brown sugar adds deeper flavor.
  • 1/4 cup unsalted butter, melted Everything is better with butter.
  • 1 large egg Do not peek until mixed.
  • 1 tsp vanilla extract Nielsen-Massey recommended.
Dry Ingredients
  • 2 cups rolled oats Not instant for best texture.
  • 1 cup all-purpose flour Basic flour is sufficient.
  • 1 tsp baking powder Ensure it’s fresh.
  • 1/2 tsp baking soda Freshness is key.
  • 1 tsp ground cinnamon Sprinkle more if desired.
  • 1/2 tsp salt Sea salt preferred.
Optional Ingredients
  • 1/2 cup chopped nuts or raisins Add for a personal touch.

Method
 

Preheat the Oven
  1. Preheat your oven to 375°F (190°C).
Soak Oats
  1. In a medium bowl, combine the rolled oats and warm milk. Let them soak for about 10 minutes.
Mix Wet Ingredients
  1. In a large bowl, whisk together the honey, brown sugar, melted butter, egg, and vanilla extract.
Mix Dry Ingredients
  1. In another bowl, mix the flour, baking powder, baking soda, cinnamon, and salt.
Combine Everything
  1. Combine the oats and milk with your wet mixture, then fold in the dry ingredients until just combined.
Add Optional Ingredients
  1. If you're adding nuts or raisins, fold them in now.
Pour and Bake
  1. Grease a loaf pan and pour in the batter. Bake for 40-50 minutes.
Cool and Slice
  1. Let the bread cool in the pan for about 10 minutes, then remove it to a wire rack to cool completely.

Notes
