  • 1 cup shredded mozzarella cheese Buy quality mozzarella for best results.
  • ¼ cup grated parmesan cheese Adds beautiful flavor.
  • Fresh herbs chopped parsley, basil, or chives Use whatever is fresh or wilting in the fridge.
Binds and Coating
  • ½ cup gluten-free breadcrumbs Genius brand recommended for crunch.
  • 2 large eggs Beaten; essential for binding.
  • Salt to taste Add pepper and smoked paprika for extra flavor.
  • Pepper to taste As desired; use fresh ground.

Method
 

Preparation
  1. Preheat your oven to 190°C (375°F).
  2. In a large bowl, combine the cottage cheese, mozzarella, parmesan, and herbs.
  3. Stir in the beaten eggs, salt, and pepper until combined.
  4. Using your hands, scoop a generous tablespoon of mixture and shape it into small bite-sized balls.
  5. Roll each cheese ball in the gluten-free breadcrumbs until well coated.
Baking
  1. Place the bites on a lined baking tray and bake for 20–25 minutes, or until golden brown and crispy.
