  • 6 large hard-boiled eggs, peeled and chopped I use large eggs because they’re just a bit more forgiving with flavour.
  • 1 cup cottage cheese Trust me, the texture it brings is beyond compare.
  • 2-3 tablespoons mayonnaise I love Hellmann's, but whatever you have will do; it's about preference.
  • 1 teaspoon Dijon mustard For that zing factor; I’ve been known to add a bit more when I’m feeling fancy.
  • 1 tablespoon fresh dill, chopped Or ½ teaspoon dried; my husband, Mike, is obsessed with it!
  • to taste Salt and pepper Season it to your heart’s content.
  • 2-3 stalks celery, finely chopped Adds crunch and freshness, just how I like it.
  • Optional Chopped red onion Don’t let my husband's dislike stop you if you love them!
  • as needed Bread of your choice I recommend a crusty whole grain loaf; it really carries the flavour.

  1. Step 1: Hard-Boil the Eggs - First, boil your eggs. Put them in a saucepan, cover them with water, and bring it to a rolling boil for about 10 minutes.
  2. Step 2: Prepare the Mixing Bowl - While your eggs are cooking, prepare a mixing bowl big enough to fit all your ingredients.
  3. Step 3: Chop and Mix - Once the eggs are cooked, chop them up in the bowl. Add the cottage cheese, mayonnaise, Dijon mustard, dill, celery, salt, and pepper.
  4. Step 4: Adjust to Taste - Now comes the fun part! Adjust everything according to your preferences. More dill? Go for it! A sprinkle of paprika? Yes, please!
  5. Step 5: Toast the Bread - While you’re mixing, you might want to toast your bread if you like a bit of crunch.
  6. Step 6: Assemble Your Sandwich - Slap on a generous scoop of your delightful egg salad on one slice of toasted bread. Top it with another slice.
  7. Step 7: Enjoy! - After assembling, take a moment to make sure everything is just how you like it.

Notes

If you don’t have cottage cheese, you can swap it for Greek yoghurt, but the texture will change quite a bit. Don't skip on the seasoning; a dash of paprika or fresh dill can transform this sandwich. Engage kids with fun veggies while you prep!
