Ingredients
  

Main ingredients
  • 2 pieces Chicken breasts, cooked and shredded Roast them the night before for tenderness.
  • 1 cup Fresh basil leaves Use more if you like basil!
  • 1/2 cup Pesto Store-bought or homemade, as per preference.
  • 4 slices Bread Ciabatta or white sandwich bread works well.
  • 1/2 cup Mozzarella cheese, shredded Essential for a cheesy finish.
  • Sliced tomatoes Optional but recommended for extra flavor.
  • Salt and pepper to taste Use as needed for seasoning.

Method
 

Prepare the Chicken
  1. Preheat your oven to 200°C (400°F). Place the chicken breasts on a lined baking tray, season with salt, pepper, and a drizzle of olive oil. Bake for about 25-30 minutes or until cooked through.
Make the Pesto
  1. If you're making your own pesto, combine basil, garlic, and olive oil in a food processor. Blend, then add cheese and nuts until smooth.
Assemble the Sandwich
  1. Spread a dollop of pesto on each slice of bread. Add shredded chicken, mozzarella, and sliced tomatoes if using.
Melt it All Together
  1. Grill the sandwiches in a panini press or skillet until the cheese melts and the bread is golden.
Serve It Up
  1. Cut the sandwich in half and serve warm, preferably with sweet potato fries or a salad.

Notes
