Prepare the Chicken
- Preheat your oven to 200°C (400°F). Place the chicken breasts on a lined baking tray, season with salt, pepper, and a drizzle of olive oil. Bake for about 25-30 minutes or until cooked through.
Make the Pesto
- If you're making your own pesto, combine basil, garlic, and olive oil in a food processor. Blend, then add cheese and nuts until smooth.
Assemble the Sandwich
- Spread a dollop of pesto on each slice of bread. Add shredded chicken, mozzarella, and sliced tomatoes if using.
Melt it All Together
- Grill the sandwiches in a panini press or skillet until the cheese melts and the bread is golden.
Serve It Up
- Cut the sandwich in half and serve warm, preferably with sweet potato fries or a salad.
