  • 2 bell peppers, diced Any color works; red is sweeter.
  • 1 teaspoon cumin Essential for depth of flavor.
  • 1 teaspoon smoked paprika Adds a BBQ-like warmth.
  • 1 can black beans, drained and rinsed Canned for convenience.
  • 1 can diced tomatoes Using Heinz is a family favorite.
  • 1 tablespoon tomato paste Important for flavor enhancement.
  • 1 cup chicken broth Store-bought works great.
  • to taste salt and pepper Season according to preference.

Method
 

Preparation
  1. Heat the olive oil in a large pot over medium heat until hot.
  2. Add the chopped chicken and season with salt and pepper.
  3. Sauté the onions, garlic, and diced bell peppers, stirring occasionally for 3-4 minutes or until the onions are translucent.
  4. Add cumin and smoked paprika, stirring to bloom the spices.
  5. Pour in the diced tomatoes, chicken broth, black beans, and tomato paste. Stir well to combine.
  6. Bring the chili to a boil, then reduce heat and let it simmer for 30-40 minutes, stirring occasionally.
