Cheesy Chicken and Broccoli Quinoa Bake

Main Ingredients
  • 1 cup quinoa, rinsed Red quinoa adds color, but any variety works!
  • 2 cups chicken broth Homemade is great, but low-sodium store-bought works too.
  • 2 pieces chicken breasts, cooked and shredded Rotisserie chicken is a great shortcut.
  • 2 cups broccoli florets Fresh is best; frozen is fine in a pinch.
  • 1 cup shredded cheese Sharp cheddar is recommended for flavor.
  • 1 cup Greek yoghurt Fage brand is preferred for its rich texture.
  • 1 tsp garlic powder Or use 2 cloves fresh garlic, minced.
  • 1 2 1/2 tsp salt Pink Himalayan salt adds a touch of elegance.
  • optional: red pepper flakes Add before serving for a kick.

Method
 

Preparation
  1. Preheat your oven to 180℃ (350℉).
  2. In a medium saucepan, combine the rinsed quinoa and chicken broth. Bring to a boil, then reduce to a simmer for about 15 minutes.
  3. In a mixing bowl, combine the shredded chicken, broccoli, Greek yoghurt, garlic powder, salt, and 1/2 cup of cheese.
  4. Once the quinoa is cooked, fluff it with a fork and gently fold it into the chicken mixture.
Baking
  1. Pour everything into a greased oven-safe dish and top with the remaining cheese. Bake for 25–30 minutes or until golden and bubbling.

Notes

If using frozen broccoli, it cooks beautifully in the bake. If you burn the bottom, scrape it off and add extra cheese to mask the flavor.
