Base ingredients
  • 6 cups Rice Krispies Generic brand is fine; they are just as crunchy.
  • 4 cups mini marshmallows Mini marshmallows melt better than big ones.
  • 1/2 cup Biscoff cookie spread The star of the show; use generously.
  • 1/4 cup unsalted butter Good quality butter makes a difference in flavor.
  • 1/2 cup crushed Biscoff cookies For topping, these add extra crunch.

Method
 

Preparation
  1. Melt the butter in a large non-stick pot over medium heat. Once melted, add the mini marshmallows until melted.
  2. Remove the pot from heat and stir in the Biscoff cookie spread until well mixed.
  3. Fold in the Rice Krispies gently until all are coated.
  4. Spoon the mixture into a parchment-lined baking dish and press it down evenly.
  5. Sprinkle the crushed Biscoff cookies over the top and press down gently.
