Preparation
- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
Roasting Sweet Potatoes
- Toss the diced sweet potatoes in olive oil, salt, and pepper on the baking sheet.
Cooking Chicken
- After the sweet potatoes have roasted for about 15 minutes, place the chicken breasts on the baking sheet and brush generously with BBQ sauce.
Making Coleslaw
- In a small bowl, combine the coleslaw mix, mayonnaise, and apple cider vinegar. Stir well.
Assembly
- Layer sweet potatoes, sliced BBQ chicken, and a generous scoop of coleslaw in each bowl.

Notes
Tips: If sweet potatoes burn a bit, scoop out the good parts. If out of BBQ sauce, mix ketchup and soy sauce for a substitute. To revive dry chicken, toss it in extra BBQ sauce.
