  • 2 medium sweet potatoes, diced Orange sweet potatoes lend a beautiful color and sweetness.
  • 1 tbsp olive oil Extra virgin olive oil is recommended.
  • to taste Salt and pepper Don't skimp on the salt.
  • 1 cup BBQ sauce Heinz is recommended.
  • 2 cups coleslaw mix Pre-packed coleslaw mix is convenient.
  • 1/4 cup mayonnaise Helman’s is recommended.
  • 1 tbsp apple cider vinegar Adds the perfect zing.

Method
 

Preparation
  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
Roasting Sweet Potatoes
  1. Toss the diced sweet potatoes in olive oil, salt, and pepper on the baking sheet.
Cooking Chicken
  1. After the sweet potatoes have roasted for about 15 minutes, place the chicken breasts on the baking sheet and brush generously with BBQ sauce.
Making Coleslaw
  1. In a small bowl, combine the coleslaw mix, mayonnaise, and apple cider vinegar. Stir well.
Assembly
  1. Layer sweet potatoes, sliced BBQ chicken, and a generous scoop of coleslaw in each bowl.

Notes

Tips: If sweet potatoes burn a bit, scoop out the good parts. If out of BBQ sauce, mix ketchup and soy sauce for a substitute. To revive dry chicken, toss it in extra BBQ sauce.
