  • 500 g fresh salmon fillet, skin removed Wild-caught salmon is preferred for better flavor.
  • 1/2 cup breadcrumbs Panko breadcrumbs provide extra crunch.
  • 1/4 cup mayonnaise Hellmann's is recommended for creaminess.
  • 2 tbsp sweet chili sauce Keep a bottle in the fridge for convenience.
  • 1 clove garlic, minced Add more if you like a stronger garlic flavor.
  • 1 tsp soy sauce Brings out the umami flavors.
  • 1 tsp lemon juice Just a squeeze for brightness.
  • to taste salt and pepper Be cautious with the salt to avoid overly salty bites.
  • optional finely chopped spring onions or herbs for garnish Adds freshness and color.

Method
 

Preparation
  1. Dice the salmon fillet into bite-sized pieces, ensuring consistency for even cooking.
  2. In a food processor, combine the salmon, breadcrumbs, mayonnaise, sweet chili sauce, garlic, soy sauce, and lemon juice. Pulse until you achieve a somewhat smooth mixture with some texture.
  3. Grab a small scoop of the salmon mixture and roll it into little balls or patties.
Cooking
  1. Heat a bit of oil in a non-stick pan over medium heat. Fry the bites for about 4–5 minutes on each side, or until golden brown.
  2. Once fried, place them on a paper towel to drain any excess oil before serving.
