  • 3 ripe bananas, mashed Mushy bananas are best for flavor.
  • 1/3 cup melted butter Margarine can also be used.
  • 1/2 cup sugar Golden caster sugar preferred for flavor.
  • 1 egg, beaten A flax egg can be used as a substitute.
  • 1 teaspoon vanilla extract Use high-quality vanilla for best flavor.
  • 1 teaspoon baking soda Essential for muffin rise.
  • Pinch salt Sea salt is recommended.
  • 1 cup all-purpose flour Avoid whole wheat for fluffiness.
Optional Add-ins
  • 1/2 cup chopped walnuts or chocolate chips Choose one or both for extra flavor.

Method
 

Preparation
  1. Preheat your oven to 175°C (350°F). Line your muffin tin with papers or grease with non-stick spray.
  2. In a large bowl, mash the bananas until smooth.
  3. Stir in the melted butter until well mixed.
  4. Mix in the sugar, beaten egg, and vanilla extract.
  5. Sprinkle in the baking soda and salt, and mix well.
  6. Gently fold in the flour until just combined.
  7. Add any optional ingredients like walnuts or chocolate chips.
  8. Spoon the mixture into the lined muffin tin, filling each cup about three-quarters full.
  9. Bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
  10. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.
