  • 1.5 tsp instant yeast (recommended brand: ‘Allinson’)
  • 1.5 tsp salt (sea salt preferred) Avoid table salt.
  • 1.75 cups warm water Water should feel warm, not boiling.

  • to taste cornmeal Optional for dusting.

Method

Making the Dough
  1. Whisk together bread flour, yeast, and salt in a bowl.
  2. Pour in warm water and olive oil. Mix until it forms a sticky, shaggy mass.
  3. Dump the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic.
  4. Lightly oil a bowl, place the dough inside, and cover with a damp cloth. Let rise for 1-2 hours until doubled in size.
  5. Punch down the dough to release the air, shape into a ball, cover, and let it rise for another 30-60 minutes.
  6. Divide the dough into equal portions to make about three pizzas, rolling each piece into a ball and resting for 15 minutes.
  7. Preheat your oven to its highest setting (around 250°C or 482°F) and heat a pizza stone or baking sheet inside.
  8. On a floured surface, shape the dough into circles, allowing some imperfections for character.
