Ingredients

Main Ingredients
  • 1 ripe pineapple, peeled and diced into chunks
  • 2 tablespoons brown sugar Use unrefined for more flavor.
  • 1 teaspoon ground cinnamon Adjust to taste.
  • 1 tablespoon melted coconut oil Adds a tropical essence.
  • 1 splash vanilla extract (optional) Or a drop of rum for a spirited twist.

Method

Preparation
  1. Preheat your air fryer to 180°C (350°F).
  2. Chop up the pineapple into bite-sized chunks, aiming for even sizes.
  3. In a large bowl, toss the pineapple chunks with brown sugar, cinnamon, and melted coconut oil until well coated.
Cooking
  1. Carefully place the pineapple chunks in the air fryer basket, ensuring they aren’t overcrowded.
  2. Cook for about 10 minutes, shaking the basket halfway through for even caramelization.
  3. After 10 minutes, check the pineapple. If it’s not golden and sizzling, give it a few more minutes but watch closely to prevent burning.

Notes

Serve warm with honey drizzled on top or with a scoop of coconut ice cream. Leftovers can be even better as the caramelization intensifies overnight. If cooking with kids, keep a small bowl of uncooked chunks aside for them to 'cook' with.
