Method
Prepare the Chicken
- Place your whole chicken in a pot and cover with chicken broth or water.
- Bring to a gentle boil and let it simmer for about 20 minutes.
Chop the Veggies
- While the chicken cooks, chop your onion, garlic, carrots, potatoes, and bell pepper.
Sauté the Veggies
- Once chicken is cooked, remove it from pot. In the same pot with broth, add oil and sauté the onions and garlic for 3-4 minutes until soft.
Add Chicken and Veggies
- Stir in the chopped veggies, shredded chicken, peas, and seasonings.
Simmer and Finish
- Let the mixture simmer gently for another 20 minutes.

Notes
